Kriska Cooks: Cilanto-Lime Chicken with Avocado Salsa



Knowing what goes into your food is but a delight especially when you're trying to shed off some pounds. And as they say, weight loss starts in the kitchen.

But while I enjoy cooking in general, I must admit that it's a bit tedious when cooking healthy food, not to mention cooking for a bodybuilder. And at times that I'm not in the mood to cook, even trying to come up with a healthy dish seems to be impossible.

Cilantro-Lime Chicken with Avocado Salsa

Good thing there are easy to prepare meals that are not just delicious but healthy as well, just like this Cilanto-Lime Chicken with Avocado Salsa.

It's a terrific recipe for a busy weeknight, for a casual alfresco dinner party, or just for when you're too lazy preoccupied to whip up a healthy dish.

Cilantro-Lime Chicken with Avocado Salsa

I’m sharing my go-to effortless dinner idea that only takes 30 minutes to prep and is perfect for weight watchers and health buffs.

With just minimal ingredients that are easy to find, a 3- to 5-minute dip into a pungent cilantro-lime marinade is all it takes to deliver big flavor to these chicken breasts.

What also I love best about this recipe is that it takes only 30 minutes to prepare: 5 minutes to marinate the chicken, 15-20 minutes to cook, and the rest to chop and assemble the avocado salsa.

Cilantro-Lime Chicken with Avocado Salsa

This recipe typically calls for chicken thighs, but since I'm feeding a bodybuilder, chicken breasts are a must! You may also opt for lemon juice, but the freshly-squeezed lime is perfect with the cilantro and brightens the taste of the chicken and also adds that tinge and tang to the simple toss-together salsa.

  Ingredients (4 servings)
    For the chicken:
    •   2 tablespoons minced fresh cilantro
    •   2 1⁄2 tablespoons fresh lime juice
    •   4 (6-ounce) skinless, boneless chicken breast halves, cut into cubes
    •   salt and pepper to taste
    •   1 1⁄2 tablespoons olive oil for cooking
    For the salsa:
    •   1 medium-sized tomato, chopped
    •   2 tablespoons onions, chopped
    •   2 teaspoons fresh lime juice
    •   1 avocado, peeled and finely chopped
    •   salt and pepper to taste

      Instructions 

    For the chicken:
      1. In a large bow, combine all the ingredients except for the oil. Toss and let stand for 3-5 minutes.
      2. Add oil in a pan over medium-high heat.
      3. Add chicken and cook 6 minutes on each side or until done.

    For the salsa:
      1. Combine all ingredients in a medium bowl and stir gently to combine.
      2. Serve salsa alongside the chicken.
